Cibo! Is a newly opened Italian restaurant in Canggu, Bali. So… Who is behind the making of
the food here at Cibo!?…

Diego is the head chef at Cibo! He’s the brains behind the fantastic and original recipes
served at Cibo! He has been very well recognised across the world winning many awards
including Best European Chef, Best Service Restaurant and Best Hotel Restaurant.
A trained chef with Italian roots, Diego has both a real understanding of the science behind
recipe development and a unique creative flair, resulting in dishes which are delicious and
homely but also wonderfully mouth-watering – a winning combination! He has worked at
delivered in very reputable restaurant’s including, Bvlgari Resort – Bali, Four Seasons,
Ferrari, Soori Hotel – Bali, Le Cirque Restaurant – New Delhi, iO Italian – Singapore any many
others.

We also grilled him with a few more questions in the kitchen – read our quickfire interview
below:

When did you first fall in love with cooking? Around 16 years old, he had a career decision
to make and went to culinary school and fell in love from there. Really loved the opportunity
to travel and experience different cultures whilst learning.

Favourite dish on the menu? Pasta

What is your speciality to make? Rice or a risotto

What is your favourite ingredient? What ever is best in season, I am a true believer in fresh
ingredients.

If you could cook for anyone in the world who would it be? Anyone who shares the same
passion and apricates the passion that goes into food.

Last meal on Earth? Fresh bread and pasta and a strong gin and tonic!

What impresses you in a kitchen? I like it when it comes from an empty fridge, 3 simple
items and make something very sexy from that.
